Odell Brewing Co. will welcome its newest food truck this weekend. Well, kind of.
ReKaivery – a shipping container “food hub” – will softly open between Odell’s Lincoln Avenue brewery and its OBC Wine Project taproom Sunday, according to ReKaivery Marketing Director Austin Lammers.
“It’s like a mini grocery store dedicated to local food,” Lammers said, explaining that the 300-square-foot shop will soon be stocked with goods from Northern Colorado vendors – everything from lettuce grown on area farms to locally made kombucha and certified- organic beef and bison meat.
While the food hub was once eyeing a space in Old Town, the project hit a snag with the city’s zoning requirements.

“Things just weren’t built for our model,” Lammers said, adding that the small crew behind ReKaivery found it easier to pivot and get licensed as a mobile retail food establishment operator.
“Basically, we’re a food truck,” Lammers said.
ReKaivery will be parked at Odell Brewing Co. through September, with the option to extend its lease into the winter if the setup works out for both parties, Lammers said. The food hub is in talks to possibly move to a more semi-permanent location at New Belgium Brewing, he added.
Eventually, ReKaivery would like to open up more locations – giving Fort Collins an option to buy local food from a year-round indoor farmers market. It would also like to install solar panels on its roof so it does not have to rely on electricity, according to Lammers.

The food hub currently only sells items that are grown or produced within 75 miles of Fort Collins, with the majority of its roughly 20 vendors located within 5 miles. On each item, the shop lists out its “food miles,” noting exactly how far away it came from.
“My vision is for people to walk in and think about their food differently,” Lammers said. “When you walk into a King Soopers, you do not really think about the supply chain. Everything you could ever want is at your fingertips, but you do not really think about how that (happens). Food is transported 1,500 miles in the US “
ReKaivery will softly open to the public from 5-8 pm Sunday. For the new few weeks, its hours will run parallel to Odell Brewing Co.’s – 11 am to 8 pm Monday and Tuesday and noon to 7 pm Wednesday through Sunday – until the food hub reassesses its future hours, according to Lammers.
